Healthy Benefits of Bean to Bar Chocolate

A summary of health benefits presented by Level 3 Alumni Joy Skipper at the first IICCT Chocolate Educator discussion Group.

In recent years, bean-to-bar chocolate has garnered attention not only for its exquisite taste but also for its potential health benefits. This artisanal approach to chocolate-making, which emphasises quality ingredients and careful processing, offers more than just a decadent treat. Joy Skipper in the inaugural Chocolate Educator discussion group presented the health benefits of bean to bar chocolate, and the research behind them. This post is a summary of the discussion.

A Rich Source of Antioxidants

One of the most significant health benefits of bean-to-bar chocolate lies in its antioxidant content. Cacao beans are rich in flavonoids, particularly flavanols, which have been linked to numerous health benefits. Flavanols are potent antioxidants that help neutralise free radicals in the body, reducing oxidative stress and inflammation. Research suggests that regular consumption of foods rich in flavanols may contribute to improved heart health, brain function, and even skin health.

Heart Health and Circulation

Several studies have indicated that moderate consumption of dark chocolate, particularly varieties with high cocoa content like bean-to-bar chocolate, may have a positive impact on cardiovascular health. The flavonoids in chocolate have been shown to improve blood flow, lower blood pressure, and reduce the risk of blood clots. Additionally, certain compounds in cacao may help decrease LDL cholesterol levels while increasing HDL cholesterol, promoting a healthier lipid profile.

Nutrient Density

Bean-to-bar chocolate retains much of the nutritional value present in cacao beans, making it a surprisingly nutrient-dense food. Cacao is an excellent source of essential minerals such as magnesium, iron, and copper, as well as fibre and various vitamins. While chocolate should not be relied upon as a primary source of these nutrients, incorporating high-quality, dark chocolate into a balanced diet can contribute to overall nutrient intake.

Mood Enhancement and Stress Relief

Indulging in a small amount (approx. 2 oz per day) of bean-to-bar chocolate can also provide a mood boost, thanks to its chemical composition. Chocolate contains compounds such as phenylethylamine (PEA) and theobromine, which stimulate the release of endorphins and serotonin in the brain, promoting feelings of pleasure and relaxation. Additionally, the rich, creamy texture and complex flavours of artisanal chocolate can offer a sensory experience that enhances mood and reduces stress.

Indulge Mindfully for Optimal Enjoyment and Health

While bean-to-bar chocolate offers an array of potential health benefits, it’s essential to enjoy it in moderation as part of a balanced diet. Chose varieties with high cocoa content (70% or higher) and minimal added sugars to reap the most healthful rewards. Remember that chocolate, even the artisanal kind, is still calorie-dense, so savour it mindfully and consider it a special treat rather than a dietary staple – while still exploring the many great craft chocolate bars we have available to explore.

After a very detailed presentation, the discussion in the group focused on what was important for consumers to understand, which is much simpler:  that bean to bar chocolate is usually made with just 2-4 ingredients compared with industrially made chocolate which contains so many ingredients that are either not recognisable, or healthy, or both!

The group agreed that educating consumers to understand the difference is something we are all very keen to do – to help people to enjoy great tasting chocolate that is not detrimental to their health (eaten in moderation!).
